Nic Adler, one of the biggest names in plant-based cuisine, is opening up a new vegan pizzeria near Sunset Junction in Silver Lake. He would not disclose the exact location or name. Adler, being a music mogul who hosts the Sunset Strip Music Festival in West Hollywood, chose to bring vegan pizza to the heart of LA, where he finds himself more than anywhere else.
“Pizza is city food,” Adler told What Now Los Angeles (WNLA). His upcoming plant-based restaurant needs to be where the streets are the most alive, where his guests can “walk up and walk away.” Serving pizza by the slice, this unnamed pizzeria will have recognizable staples, as well as an ever-rotating menu of seasonal pies. Nic’s goal is to deliver everything you’d expect from your favorite pizza place in an “easy and simple” atmosphere.
“I’ve loved pizza since I can remember,” he said. “Some of my best memories are sitting curbside in New York in the heat of summer sweating it out as I devoured a hot slice of pie.”
The pizza will be lactose free to cater to those who are lactose intolerant — whom Nic believes is a pretty sizable amount of us. In other words, whether you’re vegan or not, it’s a pizzeria for everyone. “Good pizza is good pizza,” he told WNLA.
Nic’s plan is to not open in 2020, steering closer to the “lucky 21” — as in 2021 — pending some cosmetic renovations. At this point, he feels confident this won’t be the only one, but given everything going on with COVID and the nature of the restaurant business as a whole, Nic wants to “take it one slice at a time.”
