A unique cuisine experience, complete with Mediterranean food, cocktails, and classic Los Angeles skyline views, is opening on the rooftop of The Beverly Hilton in March.
Sant’olina, a pop-up venture by The Beverly Hilton and The h.wood Group, will be a “melting pot of Israeli and Mediterranean cuisine with a Southern California vibe,” according to a press release.
“I believe the climate, produce, and sensibility of California cuisine, line up perfectly with the tastes and flavors of Israel, and the Mediterranean as a whole,” chef Michael Teich said in a prepared statement.
Brian Toll and John Terzian (co-owners of The h.wood Group) are behind the debut of the outdoor dining experience perched atop the historic hotel.
“We are excited to introduce this unique dining concept,” Terzian and Toll said in a joint statement. “We created Sant’olina for our family and friends to experience a tasteful escape to the Mediterranean paradise with the impressive open-air views of Los Angeles.”
Chefs Teich, David Johns and SLAB’s Burt Bakman will add spice to a menu of healthy and flavorful dishes.
The trio of chefs have created an array of bright, vibrant, healthy and vegetable forward options, including a savory salatim lineup paired with warm za’atar laffa bread, and plateful mezze entrees.
“Each dish tells a different story – from the traditional recipes straight out of the Tel Aviv shuks to the modern Californian touches,” the restaurant’s website reads.
The restaurant will offer dinner service nightly and brunch service on weekends.
Sant’olina is the latest to join the portfolio of restaurants by The h.wood Group including Petite Taqueria, Mason Santa Monica, The NICE GUY, Delilah LA (Delilah Las Vegas opening Spring 2021 at The Wynn Las Vegas), SLAB and Harriet’s, along with their delivery-only concepts, Lilah’s, Mama’s Guy, Ela Ela Mediterranean and launching later in 2021, Beautiful Foods Vegan.
