Founded in July of 2017 by two friends, CEO Peter Philips and Chief Brand Officer Theodore Gailas, New York-based cookie brand Chip City Cookies has been experiencing rapid growth and is on pace to more than double its footprint this year.
“We started in Astoria, Queens with a 250-square-foot store,” Peter Philips told What Now in a phone call on Tuesday morning. “We got some very early press, when Insider Food picked us up, and then we had lines around the block. So we started with very humble expectations, and then we realized it was a quickly growing business.”
Then came a $10 million investment from Danny Meyer’s Enlightened Hospitality Investments, and what has followed is the explosive growth we’re seeing now, with the brand expanding into markets in Massachusetts, New Jersey, Maryland, Virginia—and, now, South Florida. In fact, Philips says Chip City is working to open as many as five locations here in South Florida in 2023 alone, and another five to seven in 2024.
The first two locations are currently under construction in Miami Beach‘s Sunset Harbour and Miami’s MIMO District. Work is expected to begin soon on a third in Delray Beach, with more expected to follow, and fast.
That means South Florida will quickly have plentiful access to Chip City’s generously proportioned 5.5-oz. cookies. Each Chip City store offers six different cookies from an ever-growing pool of flavors, and although these flavors constantly revolve, there are a few constants: Chip City always offers a chocolate chip cookie and a plant-based, dairy-free cookie. Flavors have included Triple Chocolate and the Cannoli Cookie, along with seasonal varieties like Pumpkin Spice Latte and Super Specialties like Italian Rainbow and Baklava.
“We’re so excited about South Florida,” Philips said. “We can’t wait to see that first unit open in Sunset Harbour.”
