Colombian Food Truck Chivas Burger Appears to Plan First Brick-and-Mortar

Plan review paperwork indicates the brand may be getting a permanent home in Homestead

“When Michael Angulo moved to the United States from Cali, Colombia, 20 years ago,” reads the About page on food truck Chivas Burger’s website, “he worked as a professional salsa-dancing instructor in Dover, New Jersey, and then in Miami, where he has been for 15 years.”

Michael Angulo‘s arrival in Miami eventually led him to develop Chivas Burger, the culinary concept in question, which currently operates a food truck in Homestead. Angulo runs the food truck in partnership with his wife Isamandra Caicedo.

“When I moved to Miami,” Angulo’s said in the continued About-page copy, “I noticed there was a lot of Colombians here [Homestead] and there isn’t a lot of Colombian food in this area.”

So Angulo started serving Colombian food through the Chivas Burger concept. And now the brand’s wager seems to have paid off: signs point to the launch of Chivas Burger’s first brick-and-mortar location. A recently submitted plan review found by What Now indicates a brick-and-mortar headed to 27800 SW 127th Ave in Homestead.

Chivas’s food truck menu has featured Arepas, Perros and Choriperros (i.e. hot dogs and sausages), and a Toston Burger, in which fried and pressed plantains serve as a kind of bun. Also available are Chicken Wings, Hamburguesas, Carne Asada, and the rather decadent Papitas con Todo.

What Now reached out to Michael Angulo on Wednesday. Angulo was not immediately available for comment.
