Connecticut-Born Geronimo Tequila Bar and Southwest Grill Opening in Delray

Geronimo is expected to launch in the former Cabana El Rey space in early 2025

Born in New Haven, Connecticut in 2007, Geronimo Tequila Bar & Southwest Grill has built a following with its authentic southwestern cuisine, expanding to a second location in 2014 and, soon, to Delray Beach, where Geronimo is expected to launch early next year. According to coverage by Boca Magazine, its destination is the space formerly occupied by Cabana El Rey, at 105 E Atlantic Drive.

“Santa Fe-style New Mexican food—we like to say it’s the original fusion cuisine,” Geronimo partner Robert Bolduc told What Now on Wednesday. “It’s a mixture of Native American, Mexican, and American cuisine, all combined, so it’s a little different from your typical Mexican food.”

The dinner menu at Geronimo’s Connecticut location features tacos with proteins like birria, mahi mahi, carne asada, and more. Main entrees include Quinoa Chiles Rellenos (Mexican crema, pico de gallo, black beans, smoked tomato, mushrooms, red quinoa, Chihuahua coffee), Southwest Chicken, and Braised Chicken Enchiladas.

Bolduc was cautious to name a specific opening date just yet, but expect to see Geronimo launching early in the new year. What brings the brand to Florida specifically? The restaurateur says the move was basically a no-brainer.

“We’ve seen the amount of activity and the amount of energy down in Florida, and it’s incredible. We really wanted to be a part of it.”
