Cuban culture plays a major role in the cuisine of South Florida, with many fine restaurants offering traditional offerings like ropa vieja, lechón asado, and picadillo. These dishes are steeped in the tradition and pride of a country that has been frozen in time for nearly 50 years.
When it opens at the end of January, a new West Palm Beach restaurant will imagine what Cuban cuisine could have become if the chefs of the island nation had the freedom, abundance, and global influences enjoyed by so many around the world.
Chefs Osmel González and Camila Salazar, a husband-and-wife culinary team, have partnered with APM Restaurant Group on Emelina, located at 424 Park Place, Unit 101.
This bold new restaurant will allow the chefs to use their creativity and imagination to make dishes that honor the Cuban diaspora using ingredients sourced from Florida farmers, local fishermen, and small producers.
Those unique dishes will be served as a tasting menu that will rotate with the seasons. The intimate restaurant will accommodate 18 guests per seating, with two seatings per evening. Guests will be led through their culinary journey by the Emelina team personally.
The restaurant is a collaboration between some of Miami’s most accomplished culinary names. Chefs González and Salazar were part of the team behind Miami’s EntreNos, which received one Michelin star in 2024 and 2025, and a green Michelin star in 2025. APM Restaurant Group, led by Alvaro Perez-Miranda, is behind some of Miami’s most loved restaurants including Hiyakawa, Midorie, and the Michelin-starred Ogawa.
