Chef Anthony Iracane’s food truck called Snacky Bae will be coming through the Miami area soon. The truck will offer authentic French specialty crepes and sandwiches in a build-your-own ordering style.
What Now Miami spoke with Iracane about his food truck and business idea. Iracane is originally from France where he attended culinary school, then ran his own restaurant in France for 4-5 years. Iracane had the idea to create a food truck in order to solve the issue of French food being so expensive in the United States, therefore inaccessible to many.
Iracane says that customers “choose their base of either a crepe or baguette” and then choose a protein like “French salami, French prosciutto, French ham” along with others, and then can pick from five options of French cheese. After that, customers can choose veggies like organic tomatoes, caramelized onion and avocado before their sandwich or crepe is topped off with a special French seasoning. The truck will also offer French onion soup and a crème-brûlée-to-go.
