Located on Kendall Drive, Korean restaurant Kimbop enjoins its guests to “Eat Like Kings and Queens”—literally. Many of the brand’s dishes date back centuries, having been eaten by royalty during the time of the Joseon Dynasty.
“We like to serve our customers as royalty, as well our staff,” a representative of the Kimbop family told What Now on Friday.
And now the brand is preparing to serve up its royal cuisine at a second location, this time in Pompano Beach, at 1901 N Federal Highway.
One historical dish on the menu is the Korean classic Bibimbop, which originated in Jeonju, South Korea centuries ago. At Kimbop, it comes in several varieties, including White Rice Bibimbop and Cauliflower Bibimbop, both of which feature seasoned spinach bean sprouts, stir-fried zucchini, carrots, and onions, and a choice of protein.
Bibimbop’s Royal Meals include the Spicy Pork Bulgogi Meal—which comes with white rice, stir-fried zucchini, seasoned bean sprouts, picked paprika, pickled cucumber, and stir-fry noodle dish japchae—and Kimchi Jjigae, a kimchi stew made with kimchi, tofu, onions, and scallions.
And, of course, there’s the eponymous dish, kimbop! The name refers to the seaweed (kim) and steamed rice (bop) the dish’s ingredients are rolled in. A great way to enjoy it at Kimbop is to order the Kimbop Combo and select three rolls from choices like the Steak Bulgogi Roll, the Spam Roll, the Spicy Fish Cake Roll, and more.
“We make our dishes with jeong, a Korean word that means love, passion, sympathy and compassion,” the representative told What Now.
Kimbop’s Pompano Beach location is expected to open in early 2023.
