Coral Springs’ Cornerstone Plaza is currently building out its restaurant roster. A post on CoralSprings.gov describes the mixed-use development as “an open-air oasis situated on the southwest corner of Sample Road and North University Drive.” When completed, it will feature “a full-service hotel, luxury rental apartments, and shopping, and dining experiences.”

Among these dining experiences are Tacocraft (which has already opened), plus other upcoming concepts reported on recently in coverage by Coral Springs Talk: Paris Baguette, Let’s Chill Homemade Ice Cream, and Copenhagen Corner Wine Bar.

On top of all that, the CoralSprings.gov site also lists a new outpost of Mitch’s Downtown Bagel Cafe, a bagel shop and cafe with three locations currently in operation, as opening at Cornerstone Plaza. Mitch’s Downtown serves bagels, coffee, sandwiches, breakfast, juice, and more.

What Now reached out to co-founder Adam Shidlofsky on Thursday to ask about plans for a new Mitch’s Downtown in Coral Springs. Shidlofsky was not immediately available for comment.

“Welcome to Mitch’s Downtown Bagel Cafe, a culinary haven where a passion for food, family, and community converge,” says the brand’s website. “With locations across South Florida, our family-owned restaurants are more than just a dining destination – they embody warmth and tradition, taking you back to the vibrant hustle and bustle of New York City.”
