Dear Olivia Bar & Kitchen is bringing a polished, playful concept to the heart of Parkland this August. The concept comes from Eddie and Christina Pozzuoli and partner Paul Greenberg, the team behind South Florida’s P Hospitality Management.

Dear Olivia Bar & Kitchen Brings Playful New Concept to Parkland

Designed in soft greens, aquas, and creamy neutrals, Dear Olivia Bar & Kitchen features outdoor seating, waterfront views, lush greenery, and twinkle-lit cabanas. Named after Greenberg’s 9-year-old daughter, the restaurant channels her playful, spirited personality.

“We’re excited to bring a new and unique concept to Parkland that focuses on having fun as much as it does on great food and cocktails,” said Greenberg. “Whether it’s unwinding with drinks for Happy Hour, watching games on one of our many TVs, enjoying a great dinner with friends or family, or even a quick bite with the kids after a soccer game, there will be something for everyone,” he added.

The menu features bold, playful twists that blend global flavors with comfort classics. Starters range from comforting classics to small plates like South of the Border Tortilla Soup, Korean-Style Steak Tips, Guacamole & Chips, Mushroom & Black Truffle Flatbread, Reuben Eggrolls, and Coconut Shrimp.

The sandwiches and handheld options are just as diverse, including OG Spicy Chicken Sandwich, Brisket French Dip, and Double Smash Cheeseburger. Salad and bowl options include the Ahi Tuna Poke & Rice Noodle Bowl, Chopped Antipasto, and Black & Blue Wedge.

Among the standout entrees are Crispy Beer-Battered Fish & Chips, Shrimp & Grits – with cheesy grit cake, black pepper bacon, and sherry Creole cream, Chicken Riggies, Char Siu Pork Chops, and Grilled Beef Tenderloin.

A playful highlight on the menu is the cheekily named “Adult Happy Meal,” which includes a petite Caesar salad, boardwalk fries, and a martini. Another one is the Baked Mini Buttermilk Biscuits, served warm with pimento cheese, butter, and honey.

The beverage program is led by Jose Gill, who spent 13 years overseeing the cocktail menu at American Social. It is thoughtfully designed, featuring trend-forward cocktails, approachable wines, and a curated selection of local brews.

Signature cocktails include the Garden of Eve, made with Patrón Cristalino, mezcal, pressed ginger juice, agave, cucumber, mint, and lime. Another specialty is Blood and Honey. It has Hendricks, honey syrup, blood orange liqueur, lemon juice, and rocky botanical.

Dear Olivia will host a Community ‘First Sip’ Happy Hour to celebrate its opening. It will be open to the public on August 6, at 6:30 PM. The program will contribute to Eagles Heaven, a local charity dedicated to supporting victims and survivors of the MSD shooting.

An official grand opening celebration will follow later that month, but the restaurant will kick off other daily programs throughout the week. It will start with Daily specials, which will include $10 Cheeseburgers on Mondays, Happy Hour on Mondays through Fridays from 3 PM to 6 PM, and Olivia After Dark on Fridays from 9 PM until close.

Olivia After Dark will feature a high-energy lounge vibe with bottle specials, DJs, specialty shots, and table reservations. Starting from August 23, Saturdays and Sundays will be reserved for brunch from 10.30 AM to 2.30 PM.

With a bold menu and vibrant design, Dear Olivia Bar & Kitchen is set to make a splash in Parkland’s dining scene. Its high-energy evenings and weekly specials will create a space for the locals to gather, celebrate, and connect.
