What Now reported early last month on the rollout of Central Fare, the new food collective that launched with 12 chef-driven concepts at Brightline’s MiamiCentral Station. Now the station’s food and drink portfolio will get another exciting addition with the opening of the Sipping Station, a new wine bar and tapas restaurant.

“We’ll be bringing a touch of the Mediterranean,” co-owner Matthieu Yamoum told What Now on Wednesday. “The food is going to be mostly Spanish oriented, with a touch of French.”

The idea, Yamoum said, is to bring together an excellent wine selection and high-quality eats with the flexibility to eat on the go or hang out for while.

“It’s an open space, and it’s very friendly: you definitely could spend the whole night. But this is a train station, with a lot of traffic. It’s a place where people will not necessarily have an hour and a half. So you may only have time for a quick bite and a glass of wine. Either way, we’ll have a laid-back, cozy atmosphere with very high-quality food and drink.”

The Sipping Station is expected to open at MiamiCentral Station in August.
