Sospiro Natural Wine Bar to Open in Coral Gables

The new restaurant and wine bar will open near Ponce Circle Park

Just north of Ponce Circle Park, on the northwest corner of Ponce de Leon and Almeria Avenue, a new restaurant and natural wine bar concept is gearing up for a launch. Sospiro Natural Wine Bar will open in early 2023 at 2626 Ponce de Leon, offering organic natural wines and a menu that centers tapas and shareable boards.

“We want to create a place where people can eat, drink, relax, and socialize,” owner Fabrizio Gallina told What Now on Thursday.

At the center of the concept is Sospiro’s considerable organic natural wine list.

“It’s only natural, biodynamic, low-intervention wines,” Gallina said. “They express the territory, not the sophistication of the market.”

Choices range from dessert wines, to Champagne and other imported wines, to a selection of “Italian Gems.” All told, the wine list include more than 300 bottles, 50 of which are available by the glass. Sospiro will also showcase 30 different orange wines. “They’re made from white wine grape varieties,” read promotional materials from the brand, “but, unlike white wines, they’ve spent some time in contact with the grape skins. They display an intriguing array of flavors.”

The food menu includes a variety of small plates like Marinated Octopus, Tuna Tartare with Avocado, and Hand Cut Steak Tartare; Fritti like Calamari & Shrimps and Arancini; and a selection of shareable boards with focuses on cheese, cured meats, and crudités. Main courses include Couscous Alla Mediterranea (Sea Bass, Olives, Capers, Cherry Tomatoes, Basil, Prawn Bisque) and Veal Milanese. Food choices are also presented with wine-pairing suggestions.

On top of all this, Sospiro will hold special events like cocktail nights and live music. As the brand puts it, “when it comes to bridging cultures and building communities, is there really any substitute for sitting down, breaking bread…? And where better to share stories about culture, society, and tradition than around the table?”
