Sub Zero Nitrogen Ice Cream is an ice cream shop with a focus on education. The brand offers its ice cream (with a healthy dose of science) at locations throughout the United States, and it’s planning on launching a new location in Wynwood, at 2401 N Miami Ave.

“Armed with a chemistry degree, Jerry Hancock wanted to build an ice cream store that would excite the imagination of a generation,” reads the Sub Zero website. “There were plenty of Kid or Sports themed Restaurants. His goal was to create a local Exploratorium in every neighborhood.”

Here’s how it works: first you choose your base—original cream, or other options like reduced fat, vegan, and sugar-free. Then, choose from 35 different flavors, or combine them: “In the mood for caramel amaretto? Want a raspberry lemon cheesecake? We got you!” the website says. Then add mix-ins like candy, nuts, and fruit.

“Now comes the fun part! With a blast of LN2 (liquid nitrogen), watch your liquid treat become a frozen dessert right before your eyes! As the fog rolls across the counter, experience the wonder of science as liquid cream turns to creamy, dense, premium ice cream.”

What Now reached out on Monday to franchisee Giancarlo Rodriguez to inquire about plans for the new location. Rodriguez was not immediately available for comment.
