Donato Group, a Montreal-based hospitality company behind Ristorante Donato and Latin-inspired Sabrosa, appears to be gearing up for a series of new openings across Montreal.

While the group has not formally announced its next concepts, its Instagram account lists several projects expected to debut in 2025. These include Spuntino, an all-day cafe at 4858 Sherbrooke Street WD-Burger and Donato Gelato, located next door at 4862 Sherbrooke Street W, and Mona, a Mediterranean street food spot in Old Montreal. Another concept, Casa Donato, is expected to open in Toronto sometime next year.

The openings follow the group’s debut of Ristorante Donato in NDG and Sabrosa in the Old Port. Donato Group launched in 2023 and has since positioned itself as a multi-concept operator, balancing Italian and Latin-inspired offerings with more casual offshoots on the horizon.

The company is currently hiring for various front- and back-of-house positions, according to its social media accounts. No launch dates have been officially confirmed, though several of the concepts are tagged for Summer or Fall 2025, while Mona is listed as “Spring 2025,” which has clearly been delayed.

Both existing restaurants continue to operate on regular hours. Ristorante Donato is open daily for lunch and dinner service, with weekend brunch also available. Sabrosa offers full-day service seven days a week, including late-night hours on weekends.

What Now Montreal will continue to monitor Donato Group’s announcements and update as more information becomes available.
