Edo Japan Eyes Quebec as Part of National Growth

Edo Japan, a Canadian fast-casual restaurant specializing in Teppan-style meals and Japanese-inspired dishes, is preparing to expand into Quebec as part of its nationwide growth strategy.

While specific locations and opening dates have not been confirmed, the company has identified Quebec as a priority market following internal research and ongoing franchise development efforts, according to Retail Insider. With more than 200 locations across Canada and a goal of reaching 275 by spring 2028, the brand is actively seeking franchise partners to support its entry into the province.

“There’s a clear appetite for Japanese cuisine in Quebec, and our research shows strong interest. That will be a major focus moving forward,” Edo Japan President and CEO Dave Minnett tells Retail Insider.

Founded in Calgary in 1979 by Reverend Susumu Ikuta, Edo Japan has grown steadily over the past four decades, maintaining a strong presence in Western Canada. The chain recently marked its 200th store opening in downtown Toronto and entered the Maritimes with a new location in Fredericton. Ontario remains a core focus, with 15 additional stores expected to open over the next 15 months.

Edo Japan’s menu emphasizes freshly prepared meals, including grilled meats, vegetables, and rice topped with its original teriyaki sauce, a recipe still used today. The brand sources ingredients locally whenever possible, including chicken from Maple Leaf Foods and Canadian-made sauces. Its recent additions of poke bowls and bubble tea have expanded its appeal to younger consumers, supported by strong digital engagement through mobile ordering and loyalty programs.

Quebec presents a strong fit for the brand’s model, thanks to its urban centers, multicultural population, and established demand for Asian cuisine. The company’s franchise-first approach, backed by six corporate training hubs across Canada, positions it for scalable regional expansion. Simultaneously, Edo Japan is entering the U.S. market with its first location in Chandler, Arizona, and additional openings planned for Scottsdale and Gilbert in 2026.
