Hiba, a Japanese-inspired bar, is getting ready to open in Montreal at 340 de la Gauchetière Ouest on the 2nd floor.

The upcoming venue is the latest concept from Cogir Restaurants, a company known for its chef-driven hospitality brands throughout Quebec, according to its website. While an exact opening date has yet to be announced, Hiba is expected to open in Fall 2025. The concept will introduce guests to a cozy and intimate space focused on refined sake, signature cocktails, and mocktails, as well as delicate izakaya-style dishes.

Cogir Restaurants is the hospitality division of Cogir Real Estate, developed under the leadership of Executive Chef Partner Jean-Sébastien Giguère. The group operates a growing lineup of acclaimed concepts, including Restaurant h3, Alizé Terrace, The Coureur des Bois, The Runner’s Cabin, and Climats. Hiba represents a continued investment in Montreal’s dining scene and the group’s evolving culinary identity.

Giguère brings years of high-level culinary experience to the project, having held key roles at celebrated establishments such as Toqué!, Decca77, and Brasserie T. His leadership at Cogir Restaurants emphasizes sustainability, local sourcing, and the development of in-house food systems, including maple syrup, egg, and honey production across the group’s venues.

Guests at Hiba can expect a drinks-forward experience, featuring premium sakes, house-crafted cocktails, and non-alcoholic selections designed with the same level of care. The menu will offer a rotating assortment of izakaya plates meant for sharing, aiming to balance sophistication with approachability.

The decision to open on de la Gauchetière places Hiba in the heart of downtown Montreal, offering visibility and access in a high-traffic business and cultural district. The location aligns with Cogir’s strategy of blending unique culinary experiences into urban cores with strong residential and commercial growth.
