Hiba, a Japanese-inspired bar, is getting ready to open in Montreal at 340 de la Gauchetière Ouest on the 2nd floor.
The upcoming venue is the latest concept from Cogir Restaurants, a company known for its chef-driven hospitality brands throughout Quebec, according to its website. While an exact opening date has yet to be announced, Hiba is expected to open in Fall 2025. The concept will introduce guests to a cozy and intimate space focused on refined sake, signature cocktails, and mocktails, as well as delicate izakaya-style dishes.
Cogir Restaurants is the hospitality division of Cogir Real Estate, developed under the leadership of Executive Chef Partner Jean-Sébastien Giguère. The group operates a growing lineup of acclaimed concepts, including Restaurant h3, Alizé Terrace, The Coureur des Bois, The Runner’s Cabin, and Climats.
