The Tennessee health department conducted a routine health inspection on October 7 at Shaokao in Nashville. Inspectors noted several violations at the Chinese restaurant, including improper food holding temperatures.

According to the inspection report, health inspectors observed several violations. They are as follows:

  • Several hand sinks were observed without paper towels.
  • The restaurant did not have parasite destruction logs for its raw oysters. During the inspection, staff contacted the supplier, who confirmed the logs exist.
  • Raw shelled eggs and raw chicken were seen stored above ready-to-eat foods in the tall reach-in cooler, the report said.
  • Inspectors observed that raw pig feet were stored above onions in the walk-in cooler. The employee was instructed on proper food storage practices, and the items were rearranged accordingly.

  • Beef skewers were found at 46°F and squid skewers at 45°F in the top cooler 1. The employee was informed, and the skewers were relocated to the walk-in cooler for proper cooling.
  • A chemical bottle was found stored above breadcrumbs in the three-compartment sink area, the report noted. The employee moved the bottle away from the food and preparation area.
  • Raw chicken was observed thawing without packaging in the three-compartment sink and without running water.
  • Inspectors noted employee food stored together with customer food in the basement freezer.
  • An employee’s drink was observed stored on the food preparation counter.
  • The report noted a wiping cloth bucket placed on the floor.
  • Knives were observed stored in the gap between the prep table and the wall.

According to the footnote in the report, failure to correct any violation of risk factor items within 10 days may result in suspension of the food service establishment permit.
