During a routine inspection on October 30, the Tennessee Department of Health cited El Sabor Pochutleco for multiple health code violations. Violations included a missing thermometer in the chest freezer and improperly stored clean knives.

According to the health inspection report, El Sabor Pochutleco was cited for numerous health code violations. They are as follows:

  • Raw chicken was found stored next to par-cooked pork under the prep table. The chicken was removed from the cooked meat.
  • Par-cooked pork was left at an ambient temperature of 90°F on the bottom shelf under the prep table. According to the report, staff said the pork was made roughly 30 minutes before the inspection and planned for reheating later.
  • Raw chicken was measured at 54°F. The person in charge said it was received two hours earlier from the inspection and had not yet been refrigerated. It was placed in the cooler to lower the temperature to 41°F or below.
  • The sanitizer bucket was placed on the bottom shelf under the prep table next to uncooked chicken and par-cooked pork.

  • The report noted a customer’s drink was sitting directly on the floor in the drink station.
  • Clean knives were stored between equipment. They were wedged between the reach-in cooler and prep table on the main line.
  • The report noted that floor tiles in front of the kitchen were broken and coming loose.

According to the report, a follow-up is required, and the restaurant is expected to correct all the violations within 10 days. Failure to fix the issues will result in suspension of the food service establishment, it said.
