Mestizo’s Mexican Cuisine, known for its Mexican food, was cited for 14 major violations. The inspection report revealed that employees were handling raw chicken, raw shrimp, raw beef, fresh vegetables, and clean plates without changing their gloves or washing their hands.
The dish pit and hand sink were seen being used as a dump sink. The health inspectors noted that hand sinks are for the sole purpose of hand washing. They noted multiple cans with significant damage stored on the rack at dry storage.
The blade of the can opener was found to be excessively dirty, with a bundle of fresh herbs touching the blade on the prep table in the kitchen. The cook line drawer cooler was not kept at the required 41°F or below, with items ranging from 46°F to 55°F.
As a corrective action, all food was ice-packed, and the PIC was instructed not to use the unit until it could maintain proper temperatures. Two containers of salsa, an enchilada dated 08/02 and a burrito dated 08/14, were found past their discard dates.
