On Tuesday, May 20, 2025, Coyote Bar & Grill in Milan underwent a routine health inspection. Violations that could pose food safety hazards were observed at the restaurant, and it received a low score of 63.

Observed Violations That Could Lead to Foodborne Illnesses

The food service establishment inspection report for Coyote Bar & Grill mentioned multiple observed violations. The Person in Charge (PIC) was unable to demonstrate active managerial control, as multiple risk factor violations were observed.

The report also cited improper practices by employees. The waitress did not properly wash their hands after touching dirty dishes and went to serve food. The inspecting officer discussed proper hand-washing procedures with the staff.

The facility lacked paper towels at any of the kitchen hand sinks. This was corrected on-site as the PIC refilled paper towels during inspection. Several dented cans (Kadota figs) were found in the dry storage area. PIC discarded cans during inspection.

The inspector observed a cook handling raw hamburger and then cleaning dishes without changing gloves.The cook was educated on proper glove use and hand washing. Hot and cold food holding temperatures for many food items were not as per the standards. The pizza prep cooler’s air temperature was also 43 degrees.

Three pans of deviled eggs were not dated or marked in the prep cooler. Four pans of Duck egg rolls ( ready to eat) were also not dated with a pull date from the freezer into the prep cooler. Bulk food containers were kept unlabeled.

The inspector observed wet nesting of glass cups at the server station. Single-use pizza boxes were stored on the floor in a dry storage area, which is also a bathroom. Multiple food prep cooler cutting boards were found to have deep gouging. The vent and hood need to be cleaned as they were found to have grease and dust accumulation.

The inspection went on for around 2 hours, and the inspecting officer marked the restaurant to undergo a follow-up inspection. The dates or further details of reinspection are not mentioned in the current inspection report.
