  • An employee was observed unloading clean dishes after washing dirty dishes, exiting the kitchen through the back door, and returning without washing hands.
  • The report noted that cooked burgers were held in a bowl on the cook line stove. The person in charge said that the burgers were cooked 30 minutes before the inspection and measured at 128°F. Guidance was given to avoid overfilling containers and switch to shallow aluminum pans.
  • An unlabeled chemical spray bottle filled with a clear foaming liquid was seen stored on the bottom shelf of a storage rack behind the cash register. The container was properly labeled as a corrective action.
  • No visible thermometer was observed in the cook line reach-in freezer.
  • No door sweep was installed on the back exit door in the kitchen.
  • An employee’s beverage with a screw-top lid was observed stored on the cook line storage rack above cut potatoes.

  • Inspectors noted dirt inside the dining room ice machine.
  • Gaskets on the cook line two-door low-boy cooler were observed to be excessively dirty.
  • The report said shelving on the cook line storage rack was very dirty.
  • Kitchen floors were observed to be dirty.

According to the report, the restaurant is expected to correct violations of the risk factors items within 10 days. Failure to do so will result in the suspension of the eatery’s food service permit.
