Inspectors observed an employee eating personal food on the prep line. An employee was observed refilling a sanitizer bucket and then immediately handling food without washing their hands.
Crab wonton filling containers, bags of peas and carrots, and buckets of avocados were observed with condensation leakage on them inside a cooler that was not maintaining proper temperature. Health inspectors noted raw chicken breasts in a pull-out drawer beneath the grill at 46°F.
An employee stated the chicken had been left to cool since 11:00 a.m.; at the time of inspection, it was 3:45 p.m. Inspectors advised placing ice on the product to bring it to a safe temperature and to monitor cooling times more closely.
Two packages of pork egg rolls (measured at 50°F and 45°F), a container of jalapeño poppers (44°F), three bags of mixed greens (50°F), and two bags of pork belly (50°F) were stored in a reach-in cooler that was between 44°F and 45°F.
As a corrective action, all items except the mixed greens were embargoed. The health inspectors saw frozen beef and shrimp thawing on the counter in plastic bags. The ice scoop in the ice machine was seen stored with the handle down, touching the ice.
The vent hood, right above the flat top grill, was observed to be covered in grease. The report mentioned there was excessive dirt and grime buildup on the wall behind the 3-compartment sink.
Follow-up Inspection
The Nashville Health Department has required the restaurant to correct all risk factor violations within 10 days, ahead of the follow-up inspection. The health department will reassess compliance at that time to determine whether the restaurant can maintain its operating permit.
