José Andrés Group has new plans for the rooftop space at the Gulch hotel W Nashville. The Washington, D.C.-based hospitality group will open Butterfly on the 13th floor, taking over the space currently home to Proof Rooftop Bar, according to a release.
Butterfly is one of José Andrés Group’s newer concepts, opening its first and only location on the rooftop of The Shay Hotel in Culver City in 2024. It will offer a cocktail lounge, 360-degree views of Nashville and a high-energy ambiance.
The menu features ceviches, tacos, quesadillas and other small plates alongside an agave-inspired beverage program heavy on margaritas.
Butterfly will be one of three José Andrés Group concepts joining the hotel early next year. Mediterranean concept Zatytinya and seafood-driven concept Bar Mar are both slated to join the hotel alongside Butterfly. The trio of restaurants will mark the group’s first Nashville venture.
“W Nashville has always been a place where bold design, elevated experiences and local culture collide, and our partnership with José Andrés Group takes that vision to the next level,” Christopher Cannon, general manager of W Nashville, said in the release. “We’re honored to welcome such iconic culinary concepts to our hotel and to the city. From Zaytinya’s vibrant Mediterranean flavors to the rooftop energy of Butterfly, these new venues will not only redefine dining in the Gulch, they’ll become part of the rhythm of Nashville itself.”
Current food and beverage offerings at W Nashville include Proof Rooftop Bar, Living Room, Carne Mare Italian Chophouse and Barista Parlor. Aside from Butterfly replacing Proof, it is unclear if other spots are expected to close or shuffle around in the revamp.
