As the Longhorn Coffee Bar team prepares to open its first brick-and-mortar location in Cookeville, co-owner Brian Heim shared with What Now Nashville that there could be additional expansion in their future.

Their forthcoming coffee shop marks an expansion of their brand, which Brian launched with his wife Kate in 2022 in a mobile coffee trailer. They now have two locations in trailers and this new store on the way, serving Western-themed coffee beverages such as the Annie Oakley (coconut with dark chocolate drizzle), The Bandit (caramel with dark chocolate drizzle) and cinnamon-focused coffee beverage Smoke Wagon.

“When we started out, we didn’t know if we were just going to have one or if it was even going to work,” Brian told What Now Nashville. “Obviously now here we are.”

Brian said he sees potential for expansion in the area in the coming years. He said they want to keep locations close to Cookeville so they can continue to manage and operate all their locations. They are interested in towns like Sparta, Livingston, Crossville and Baxter as potential areas of growth.

“We can see ourselves expanding and growing moving forward,” Brian said.
