Former Haitian Food Truck owner to open Ghost Kitchen

Chez Lama Haitian Cuisine‘s owner is planning to open a new ghost kitchen.

Someone stole Lamartine Alvarez‘s food truck earlier this year while parked near Eastland and Riverside.

Originally, Alvarez planned on opening another food truck business, but a social media ad about a ghost kitchen led him down another path.

“I didn’t know what it was, so I called, and I got a tour and some information,” Alvarez told What Now.

After consulting with his wife, Alvarez decided a Ghost Kitchen was the way to go.

“We felt we would be better able to give better service to our customers,” he said. “I will be operating in a safer environment, with more flexibility to work longer hours, and have more items on the menu.”

The new Chez Lama Haitian Cuisine will be at 614 18th Ave. N.

The menu item will include more choices for customers, Alvarez said.

Previous items on the menu include a variety of pastries, Haitian eggs, Saute Mushrooms and broccoli, red beans, and crispy Pat finger (chicken thigh strip).

A permit was recently to finish constructing the ghost kitchen for the restaurant.

It’s unclear when Alvarez will open the new location.
