Longhorn Coffee Bar is expanding to its first brick-and-mortar location in Cookeville. It will open at 490 East 10th Street, Suite 101, joining two existing locations in trailers positioned throughout Cookeville.
Brian and Kate Heim launched the business in 2022 when they moved to Cookeville. They opened up in October of that year in a horse trailer that Brian modified to suit their needs for the business. They opened their second location in June 2023.
The brick-and-mortar will have seating for about 30 customers and will feature Longhorn’s signature rustic, country-Western design. Brian is building out much of the interior himself, including the bar, using locally processed wood.
“Our biggest motto is buying local,” Brian told What Now Nashville. “When we built our trailers, we tried to do all local woods, bought the trailers local and any vendors we use for products we try to use local [vendors]. We want to support the towns we’re in.”
The menu will feature their usual signature drinks such as the Annie Oakley (coconut with dark chocolate drizzle), The Bandit (caramel with dark chocolate drizzle) and cinnamon-focused coffee beverage Smoke Wagon. In addition to coffee options, the menu features smoothies and tea.
Eventually, they hope to add a food dimension to the menu at the brick-and-mortar, such as paninis and sandwiches.
This spot will be located near Tennessee Tech University, so with this location, the Heims hope to tap into that market.
“We’re near the college, so our big hope for this one is that college kids will come in and study,” Brian said. “We’re going to have free Wi-Fi for them and for business people doing meetings and interviews.”
The location is currently under construction. Brian said they are hoping to open by early November.
