Will Spiva, owner of Caffe Nonna, is taking over the Taqueria del Sol space at 4500 Charlotte Ave., with plans to bring in an updated concept that will stay true to the taqueria’s roots.
Taqueria del Sol, which has been in the 3,400-square-foot space since 2017, will be closing this spring to make way for Tres Hermanos, which Spiva is opening with Taqueria del Sol’s kitchen manager.
Spiva is not aiming to completely change the taqueria concept, but rather to upgrade it. The menu will be similar to the taqueria’s, offering familiar appetizers, tacos, guacamole, salsa, Peruvian chicken, nachos and fresh tortillas. The menu will also offer an expanded cocktail program, and the interior will undergo some renovations.
“I used to work at Taqueria del Sol, and the chef who I worked with for that whole time and I are going to be taking over and updating the taqueria,” Spiva said. “We’re going for a more local and handmade feel with some wood paneling and paint and some more wicker chandeliers. We’re going to try to make it feel smaller and more intimate but still going with the fast-casual concept.”
Spiva is looking forward to returning to the taqueria, where he gained much of his restaurant know-how before taking over ownership at Caffe Nonna. He is excited to reconnect with regular customers and bringing in some upgrades to improve their experience.
“The team at Taqueria del Sol currently — about 90% of them are people I hired, and I know them all very well,” Spiva said. “I’m very excited to get to work with them again.”
With renovations still to come, Spiva is targeting an early April opening.
