A new restaurant is heading to McMinnville. Roman’s Greek & Grill will open at 1578 Sparta St. by the end of the year.
Owner Fady Girgis told What Now Nashville that the concept will offer an assembly-line style restaurant with a fresh twist. Expect a concept similar to Chipotle and CAVA but with distinct Greek and Mediterranean influences.
Customers will be able to choose their base, protein and toppings. Menu items will include variations on typical bases and protein offerings, with options like kebab, chicken shawarma, ground beef and gyro. The food will include Greek and Mediterranean spices.
The restaurant will be 2,600 square feet and will have 50 seats. Other elements of the interior include 20-foot ceilings and an open-concept kitchen.
Girgis is familiar with the local food and business scene. He owns a local vape store as well as two restaurants: Skip’s Grill in Winchester and Foutch’s Family Restaurant in McMinnville. With Roman’s Greek & Grill, he is hoping to fill a gap that he has identified in the McMinnville restaurant scene.
“I’m a businessman,” Girgis said. “I look at things that aren’t included in a particular area and try to implement it.”
