Before June, Out the Pot was a food trailer and catering company in Baton Rouge known for comfort food, like burgers, turkey wings and brisket mac-n-cheese. But when a viral video from local influencer Maameefua Koomson featured Out the Pot’s Boudin Birria Tacos, the trailer has been getting swamped with birria taco fans.

In order to keep up with demand for his tacos and continue with their successful catering side of the business, owner Jonathan Manning is preparing to open a takeout spot at 5355 Government St. in Baton Rouge this fall. He’s also hoping to get back to his daily rotating specials for plate lunches.

“We’ve been doing strictly tacos just due to the large demand that we’ve been having for them,” he recently told What Now New Orleans. “Once we open up the building, we’ll still be doing tacos, but we’ll be having everyday specials for our hot lunches as well.”

Manning said the menu at the takeout spot will include a few new menu items, along with his signature line of lemonades. He said his team is very passionate and they take a lot of pride in what they do. He also said they are focused on providing a consistent product.

“We take a lot of pride in being from Louisiana and it being known as a food capital of the world,” he said.
