Brooklyn Granary & Mill (BGM) is bringing a mill and bakery to 300 Huntington Street in Brooklyn. The spot will serve as a gristmill, selling wholesale flours, as well as a bakery, which will serve items like baguettes, topped focaccias and croissants, according to reporting by Grub Street.
“BGM is founded on the ideas that flour is even better when it is grown in a way that makes the soil better, that better bread comes from fresh stone milled whole grain flour, and that more access points are needed to bring regional grains to bakeries, restaurants and individuals in New York City,” the BGM website states.
BGM focuses on local ingredients and using grains from regenerative farming.
Owner Patrick Shaw-Kitch has worked at bakeries across the country, including Columbia City Bakery in Seattle and Bien Cuit in Brooklyn. He spent five years milling and baking with whole grain flours at Blue Hill at Stone Barns and has more than 20 years in the food industry under his belt, according to the BGM website.
BGM has started buildout and is planning to open this winter, according to its website.
