Moko’s Max Goldberger Proposes New Concept For Former Dumpling Lab

One of New York’s youngest entrepreneurs is planning a brand-new restaurant concept for Noho.

Max Goldberger is currently making a name for himself as one of New York’s youngest hospitality professionals. A multi-faceted entrepreneur with many different interests, Max is known by many for his work as a DJ, an influencer, and for founding the popular fashion retailer IZI. Our hospitality-oriented readers though are more likely to recognize his restaurant, Moko NYC, one of the East Village’s newest omakase dining experiences. Combining fresh, premium ingredients with creative techniques, Moko sets out to bring affordable omakase to everyone and offers an especially popular 15-course tasting menu that starts at only $65.

Now, Max is once again gearing up to launch a brand-new restaurant concept. The new restaurant, dubbed Shiso, is envisioned as a “Tasting menu French/Japanese high-end concept” and is currently expected to open up at 214 East Ninth Street. The location was formerly home to Dumpling Lab, a contemporary Tsingtao-inspired gastropub known for serving up seafood dumplings and Chinese tapas. Sadly, Dumpling Lab shut down for good last year and it remains unclear if the restaurant will reopen somewhere else.

The location is relatively spacious and is expected to seat about 58 guests inside at one time. The space will also feature two bars that will add an additional 16 seats. There are no plans at this time to establish any outdoor seating, but that decision is still subject to change. While Max has not revealed many details about Shiso’s menu, the general concept will fuse Japanese and French cuisine and offer guests a unique tasting menu experience.

Max is also looking to acquire a beer and wine license for Shiso, and is proposing operating hours of 5:00 PM – 10:00 PM every day, seven nights a week. While he has not yet released any social media accounts for Shiso, you can follow the man himself on Instagram and you can pay a visit to Moko to get a sense of what to look forward to.
