New Filipino Restaurant Planned For Houston Street

Soledad Robillo promises to serve the best Filipino food in New York City.

A brand new Filipino Restaurant is currently getting underway to open up in Greenwich Village.

The restaurant, which will be called Bar 9, will be operated by Robillo Holdings LLC, which is owned by Soledad Robillo. When asked to describe her vision for the new restaurant, Robillo stated that she is “going to focus on serving the best Filipino food in New York.” Noticing a lack of quality Filipino options in the neighborhood, the ambitious new restaurant owner knows that New Yorkers are sorely missing out on one of the most diverse cuisines in the world.

With influence from Chinese, Spanish, American, and Austronesian cuisine, “Filipino cuisine” is a wide umbrella that encompasses the traditions of hundreds of different communities native to the Philippine archipelago. Located at the crossroads of the historic spice trade, the archipelago has a history as rich and diverse as its culinary traditions. Featuring everything from tasty curries to Iberian stews and oxtail, Filipino cuisine is especially unique in the way that it bridges so many different traditions.

Robillo, who also operates a salon in Murray Hill, will be opening up Bar 9 at 90 West Houston Street, replacing Railway NYC. Railway NYC was a popular local bar that was modeled after a train’s dining car, but sadly the Covid-19 pandemic ended its reign as it did so many other bars. Thankfully, Robillo is in the process of applying for a full liquor license, so anyone whose lost their regular watering hole will have a brand new bar and restaurant to explore.

Robillo is currently proposing operating hours from 11AM – 4AM every day. While this is quite common for the neighborhood, those hours are always subject to change at Bar 9’s SLA hearing, which will be held later this month. Presuming everything goes smoothly though, Robillo will soon be able to begin phase two of the project, designing the space to match her new vision.
