The quickly-growing acai bowl chain, Acai Express, is planning to open a new location in Melbourne, according to a recent plan review with the State of Florida.
The store will be run by Ed and Stacy Otero, who were actually the first to assume ownership and development of the first Acai Express outside of Puerto Rico nearly a decade ago.
“Ed continues his artistic endeavor as a graphic designer and web developer and operates another small business, Concept Artworks,” a 2016 profile in Florida Today states.
“He has created original brand images and custom websites for hundreds of small and large clients throughout his design career. Stacy graduated from Temple University, Philadelphia, PA with a bachelor’s degree in journalism, public relations and advertising. She went on to gather over 10 years of professional marketing experience in the industrial, software and retail space and has traveled globally for her work.”
Founded in Puerto Rico by Hector Westerbrand, the restaurant began as Westerbrand’s response to a lack of healthy food in the coastal town where he lived. He successfully began selling smoothies and bowls on the beach, leading to a fully-operational food truck, and ultimately to a quickly-growing franchise with locations in Puerto Rico, Florida, the Carolinas, and New Jersey.
No opening date has been announced.
