Hung Huynh is a celebrity chef who has earned his title.
Born in Saigon, the talented toque moved to the U.S. as a child and quickly became introduced to the culinary arts at his family’s restaurant in Massachusetts. The Culinary Institute of America (CIA) graduate worked at some of New York City’s finest kitchens including Lespinasse and Thomas Keller’s Per Se, along with Guy Savoy in Las Vegas. in 2007, Huynh won Top Chef Season Three, and his career advanced even more, with his work taking him around the world.
Now, Huynh is bringing his decades of talent and knowledge to Orlando’s Mills 50, where he is opening Pomelo with restaurateurs Johnny Tung and Jimmy Tung. Huynh and the Tungs met through their mutual work at Mills Market, where the chef serves as culinary director, and operated Saigon Snow and the limited-run Baddie Bird pop-up at the food hall.
The restaurant is taking over the former Twisted Handles/Brass Tap space at 1632 N. Mills Avenue, with a spring 2026 target for opening, according to its Instagram.
A menu has not been released, but expect live-fire Southeast Asian dishes and an interesting cocktail menu.
