A Puerto-Rican bakery is coming to Polk County by way of restaurateur Saul Graciani. On Friday, What Now connected with Graciani to confirm details about the forthcoming business.

At the southern end of Lake Tracy, Don Criollo will appear at 201 E Hinson Avenue. Though it will not directly neighbor any other eateries, it is just down the street from Homestyle Chicken N Fish, City Caribbean Café and Pizza Hut.

The concept will be a hybrid of a full service model and walk-up counter service. Guests can choose to approach the counter and browse baked goods and food, order there and have their meals brought to them. Or, guests can sit with a menu and order with the waitstaff.

The business is in the plan review stage of pre-opening, and Graciani mentioned that they are finishing up their construction soon. Expect to find the Puerto-Rican concept open early sometime next month.
