Fluffy Fluffy, an exciting new concept, is coming to Orlando in mid-summer, according to recent public records. The eatery will be located at 2008 E Colonial Drive, occupying a former Subway.

“We will be serving Japanese soufflé pancakes and other handcrafted Japanese inspired desserts, pastries, and drinks,” owner Steven Lin tells What Now Orlando

When asked about his motivation to open such an original establishment, Mr. Lin points to the energy of the restaurant scene in contemporary Orlando and eye-opening recent travels.

“It was the trend and the new boom of foodie concepts in Orlando. After my visit to Japan, I realized that soufflé pancakes would do very well here.”

The location, Mr. Lin explains, hopes to capitalize on the energy concentrated in the general area.

“Mills 50 district simply seems like a great home for new, trendy concept.”

Regarding opening, Mr. Lin did not share a specific opening date but eyes a grand opening sometime in July.
