Local Duo Opening New Concept—While Eyeing Future

According to recent reporting in OBJ, a local restaurant group is feeling good about central Florida as they approach their newest opening. 

As Good Salt Restaurant Group approaches the official opening of Sparrow at 807 N. Orange Ave, owners Jason and Sue Chin hinted a potential future in their recent interview. 

“We’re not really entertaining ideas from other markets, at least not with Good Salt,” said Jason to the OBJ

“We’re all in on Good Salt and committed to Orlando and Central Florida. We want to stay here because there’s a lot of work to be done. We were eager to bring cool concepts here that we have seen in bigger cities.”

Sue added “We decided early on that we would do something different each time. We didn’t really feel like there were many restaurant groups in town doing it that way.” 

When asked why they envision for Orlando’s F&B scene for the next decade, the couple is optimistic. 

“I truly feel like the best is still yet to come. A lot of groundwork is being laid. Homegrown talent is expanding and investing,” said Jason. 

“We’re getting attention from other chefs coming into town and poking around. They realize how business-friendly Florida is in general,” Sue added. 

“Some chef colleagues from D.C., who are also James Beard finalists, seem to be expressing interest in Orlando. Some of our chef friends in Chicago are asking to do something together here. All these big-name chefs want to come. 

No specifics on potential projects were named.
