Michelin Recognized Sushi Saint to Open Second Location

Sushi Saint, the temaki sushi hand roll bar by chef Michael Collantes, is opening a second location at Icon Park. The restaurant, located at 8375 International Drive in Orlando, will open by March 2026

The original Sushi Saint, located in Downtown Orlando’s Creative Village, received a Michelin Bib Gourmand in 2024 and 2025 for its hand rolls made with quality ingredients and the freshest seafood, and 12-seat omakase experience paired with different curated sake offerings.  Favorite temaki rolls include tuna, scallion, and wasabi; crab, miso butter aioli, and cucumber, and a5 Wagyu, with truffle mushroom jam. Sushi Saint also has curated tastings that include a bluefin tuna “set”,  and curated offerings of three or five pieces of sashimi.

Chef/owner Michael Collantes is one of Orlando’s most innovative chefs. His restaurant Soseki Modern Omakase earned a Michelin Star in 2022 for its 10-seat omakase tasting menu that sources the best fish from around the globe, pairing it with Central Florida’s freshest produce.

Sushi Saint offers the same quality experience in a vibrant atmosphere. When it opens, the larger 3,000 square foot Icon Park restaurant will offer indoor and outdoor seating for 150 diners. It will join a host of restaurants at Icon Park including Brother Jimmy’s BBQ, Outback Steakhouse, and more.
