Neighborhood Bar Aims for March Opening

The Pontoon Saloon is expected to appear on Lake Eustis.

Owner Richard Grygo intends for The Pontoon Saloon to be a low-key local hangout. Grygo spoke with What Now on Tuesday to confirm details: “We’re going to start off [serving] bar food, a sort of limited menu, and we’re going to add to it as we go along.” 

The drink menu will start out featuring only beer and wine, but Gyrgo commented that they will provide a full bar if there’s interest. 

The saloon will be hosted at 1050 W Burleigh Boulevard, once home to Sinbad’s of Lake County. Currently, Grygo is in the process of licensing. A plan review filed with the city in December is still “in process.” 

Originally the owner of a trucking company in Pennsylvania, Grygo shared that he grew tired of the weather and left the company to move to Florida. The Pontoon Saloon is his first foray into restaurant ownership. 

The bar won’t be catered to tourism, and Grygo hopes that its location on lake Eustis will draw a crowd of boaters and other regulars. 

The interior currently is built out, according to Grygo, and depending on the speed of the licensing process, he hopes to open in March.
