According to recent public records, a new independent restaurant is coming to Melbourne. Melbourne Kitchen will soon come to 55 E Nasa Blvd.
“As a family business, we are focused on not just having a restaurant but a community,” a recent Facebook post states.
Describing itself as a New American Restaurant, the tagline for the establishment as stated on the website is “Where Classic Comfort Meets Creative Flavor.”
What Now recently reached co-owner Tara Weaver to get the latest on the upcoming establishment.
“It’s going to be American food,” she said. “We’ll be doing breakfast and lunch to start with; down the road we will add dinner.”
“We’ll serve omelettes, sandwiches, homemade New Jersey style potatoes to go with the breakfast meals,” she adds, articulating the menu. “For lunch we’ll have steak marsala, tacos, sandwiches, burgers. We’ll also have a daily special soup–a soup of the day.”
Weaver spoke at length about the challenges of restoring the premises to the pristine space local diners will soon get to know.
“The diner was in really bad shape,” she said. “We had to redo everything to get it where we wanted it to be.”
“It’s been about two years and a half since we shut it down to renovate. Everything was done the right way to make it modern.”
And now, the restaurant is approaching its debut.
“It was a lot of work, a lot of dedication–but it turned out to be really, really beautiful,” she said. “We can’t wait to open our doors to the public.”
And when exactly will it open?
“September 15th is the target date–but anything could change.”
