A new restaurant called Acqua Di Mare is under construction in downtown Chandler. According to a pending liquor license found in state public records, Acqua Di Mare is located at 106 S. Oregon St.

Owner Nikola Hristov tells What Now Phoenix that he hopes to open by the end of March. Currently, their kitchen is still under construction and afterwards, he hopes to complete a successful round of approvals and inspections.

In the meantime, Hristov is busy developing his food and drink menus. His inspiration lies in the Mediterranean coasts along France and Italy. Hristov’s father is Italian, so he hopes to incorporate this influence into his menu by importing ingredients like tomato sauces and pastas direct from Italy.

Hristov brings to the table 17 years of experience in the industry, including Maître d’ at a Michelin-starred restaurant, plus cooking at kitchens in Europe, New York, and Miami. Expect dishes like Lobster Thermidor and Steak Diane expertly prepared by a chef right at your table.

At the start, Hristov is focusing on four or five signature dishes for the dinner menu. Along with a house cocktail list, Acqua Di Mare will highlight an extensive and stellar wine list, featuring 200 varieties of wines from all over the world.

The size of the restaurant is limited, which is why they will be reservation only with three different seatings. Further down the road, they hope to expand an outdoor patio into a lounge setting, where diners can finish enjoying their drinks after dinner.

Acqua Di Mare’s website and social media sites are still in the works, but should be up and running within the next month. Until then, stay tuned for more information and keep an eye on this address.

Correction: An earlier version of this article misstated Hristov’s professional background. While he did work at Va’ Bene, he was not one of the chefs. Additionally, he was the Maître d’ at a Michelin-starred restaurant, but has cooked in other kitchens. Hristov has also clarified that Tomahawk Steak will be served at Acqua Di Mare but not offered table-side.
