Ares Collective Group, the team behind popular concepts like Prep & Pastry, is officially taking over the former Bergies Coffee property in Downtown Gilbert.

The new project will combine the historic location with Ares Collective’s current downtown spot to create an all-new food and drink experience, according to East Valley Now. Owner Nathan Ares tells What Now Phoenix that the new development, called Claire House Social, is expected to open by the end of the year. The space will feature multiple cuisines, a garden-inspired atmosphere, open-air seating, and shaded areas equipped with heaters, misters, and plants. The goal is to create a neighborhood gathering yard with bars, live music, sports viewing, and a relaxed vibe. Ares Collective also plans to preserve The Clare House, Gilbert’s second-oldest building, as part of the project—a move that shows their commitment to honoring local history.

In an interview, Ares tells What Now that this is just one of several projects currently in development. The team is working on a new concept that may be located in the Cooley Station area, although details are still limited. In addition, Ares Collective plans to relocate Prep & Pastry to a more community-focused location, with the Agritopia area being considered a possible site. While no official announcements have been made yet, more updates are expected soon.
