Bamboo Sushi to Open at the Switchyard

Bamboo Sushi, the sustainable Portland-based sushi restaurant, is coming to Queen Creek.

The restaurant will open at the Switchyard, the multi-use development project that is being coined as Queen Creek’s first walkable downtown district, located at Ellsworth and Ocotillo Roads.

The Switchyard is a 10-acre development that includes 206 multi-family units, dining, and retail in one space.  Big names like Portillo’s, Shake Shack, and Snooze A.M. Eatery are the restaurants previously announced for the space. Additionally, Room and Porch, Zara Nail Bar, and Edward Jones also signed leases. An opening date has not been announced.

Bamboo Sushi is the latest restaurant to ink a deal with the Switchyard for a 3,198 square foot restaurant at the center. The restaurant is known for its sustainable practices. The sushi chain partners with the Marine Stewardship Council (MSC) and Monterey Bay Aquarium’s Seafood Watch to ensure ethical sourcing of its seafood. The restaurants offer eco-friendly sushi, along with cocktails and sake. Other items include crispy rice, poke bowls, fried rice, steak tataki, crispy garlic tofu, and a wagyu burger.

Primarily based in Portland, Bamboo Sushi has expanded to Seattle, Denver,  and the California Bay area. Now, the company is entering the Phoenix market.
