Bojangles, the restaurant chain that specializes in fried chicken and biscuits, is opening a new restaurant in Gilbert.

The restaurant, to be located at the northeast corner of Val Vista and Mercy Road, is scheduled for a spring 2026 opening date.

The project is part of a 20 unit deal led by operators, LVP Restaurant Group, LLC, an entity of LV Petroleum, in partnership with Kingsbarn Realty Capital, serving as real estate developer, according to a Bojangles press release. Kingsbarn confirmed the news with Anthony Hama, the company’s president of development opportunities, noting, “A typical Bojangles employs around 100 people, so this location will bring meaningful job opportunities to the community, along with increased sales tax revenue and economic activity.”

Founded in 1977, the North Carolina-based restaurant offers Southern fried chicken that’s made from scratch daily. The restaurant also serves Southern favorites like biscuits and sweet tea, along with offering lighter options like salads, boneless tenders, and sandwiches.  The chain has grown in popularity and now has more than 600 locations in the U.S.

The company also has its own foundation that supports literacy, military appreciation, and community strengthening. Since its inception in 2022, the Foundation has donated more than 22,400 books and $1.5 Million dollars to support community causes in the neighborhoods it serves.
