Bubbakoo’s Burritos might be coming soon to Gilbert. A recent building permit found in city public records indicates that the restaurant is under construction at 2649 S. Market St. off Loop 202. If this new location is confirmed to be true, the timing of the source suggests that Bubbakoo’s Burritos will open in the coming months.

Bubbakoo’s Burritos originated in Point Pleasant, New Jersey, where in 2008 Paul Altero and Bill Hart founded the fast-casual Mexican chain as a place to relax and have a delicious meal. At Bubbakoo’s, customers build their own bowls, burritos, tacos, nachos, quesadillas, taco salads, and fried breaded rice balls called Chiwawas.

Their protein options range from traditional options such as chicken, pork, and ground beef, to hibachi steak and shrimp. They also serve wings, tater tots, curly fries, and desserts. Representatives for Bubbakoo’s Burritos could not be reached for comment at the time of publication. For more information, visit www.bubbakoos.com.
