Last fall it was announced that Bully Brew Co. will be one of the new tenants at Park West, but it looks like many fans are still awaiting the cafe’s official opening. What Now Phoenix has checked in with owners Nate and Tabitha Wall, who now say that Bully Brew Co. will potentially open doors in Q4 of this year.
This long-awaited storefront has been in the works for as long as we can remember. In July of last year they announced that they were still making progress, even after determining that they were in need of a bigger space than they had thought. A building permit found in Peoria public records indicates that that space is now at Suite 1720 in Park West, along 9828 W. Northern Ave.
Bully Brew Co. sets themselves apart by slow roasting their beans exclusively over 6,000 feet above sea level. The high-altitude ensures a perfect, even roast without charred or bitter flavors. Bully Brew’s brewing method of choice is Cold Brew, in which beans are coarsely ground and steeped in cool water for over 12 hours.
The long process results in a smooth, full-bodied drink that is higher in caffeine and lower in acidity. If Cold Brew isn’t your jam, Bully Brew Co.’s beans also make some exceptional espresso beverages.
While their brick-and-mortar opening is still to come, they’ve still managed to find a way to serve Peoria fans until then. Popping up regularly as Bully Bistro at Momma’s Organic Market in Park West, they serve their coffee and craft beverages alongside breakfast and lunch bites.
