Local restaurateur Clay Caldwell of Caldwell County BBQ and Clay Dawgs has plans to convert the latter into a new Tex-Mex concept called Caldwell County Mexi-Q, reports Community Impact.

“If you know Clay Caldwell, you know (1) that he has a fascination for experimenting with food flavors and (2) that next to BBQ, Clay loves a good hot dog,” shares Clay Dawg’s website—well, 1 is certainly still relevant. By the sounds of the name Mexi-Q, Caldwell will take his BBQ interests to a new level when the eatery rebrands. According to Community Impact, that should happen in the next month or so–so re: those hotdogs, go get ’em while they’re hot.

You’ll be able to find Mexi-Q at 546 N Gilbert Road in Gilbert, not far from Flancer’s Incredible Sandwiches & Pizza and Circle K Gas.

No word yet on what exactly the new menu will look like—but if Caldwell’s existing eateries are any indication, it’s sure to be award-winning and quite tasty. Stay tuned for updates.
