A brand new restaurant and bar concept called Dodo Bird Kitchen & Cocktails is preparing to debut in Scottsdale, located at 7901 E Thomas Road, Ste 108.

The restaurant will replace Shanghai Palace in the Indian River Plaza, according to a recently approved liquor license application. Owner Matt Carfagnini tells What Now Phoenix that he and his business partner Dolh Chompupong hope to open Dodo Bird around Thanksgiving, but most likely, it will open around the first week of December 2024. Customers can expect an imaginative decor that pays a spirited homage to the dodo bird, blending whimsical elements with a vibrant, pop culture-forward environment.

The dodo bird, known for its distinctive charm and playful nature, serves as the perfect muse for our restaurant, and customers will see its inspiration in every space of the restaurant, including the menu, which is a testament to the restaurant’s commitment to bold, adventurous flavors and high-quality ingredients. When Dodo Bird opens before the end of the year, it will serve a variety of delicious items, such as fresh salads, unique chicken dishes, and specialty burgers. The restaurant will also serve a gourmet Wellington Burger.
