Batch Cookie Shop has offered their loyal customer base a variety of cookies baked with premium ingredients in Gilbert since 2020 and is set to open a second location near the community of Queen Creek, at the corner of Rittenhouse and Ellsworth Roads within the year, according to local media outlet Pulling Corks and Forks.

Brothers Brad and Craig Peterson, along with their wives Jessica and Boston Peterson, respectively, created cookie recipes in their kitchens before subleasing the Planet Subs kitchen in February 2020. After growing a following on Instagram during the pandemic, they opened their first location at the corner of Higley and Baseline roads in Gilbert in April of 2021. Popular flavors include dark chocolate peppermint, shortbread, white chocolate macadamia nut, s’more cookies, key lime white chocolate, and white chocolate raspberry cookies, to name just a few.

Their move to Queen Creek is motivated by the same tenet that runs through their entire business model: community. “Our circle of family and friends have been begging us to bring Batch here for a couple of years,” co-owner Craig Peterson told What Now Phoenix by email. The Peterson families live in Queen Creek themselves, he says, and “Batch Cookie Shop really caters to the family.  Queen Creek is a wonderful community of families, and we are happy to provide a location where they can join, celebrate or have fun together. There are only so many choices for a dessert or treat in Queen Creek, and we are thrilled to bring in a locally grown concept and not another corporate chain.”

Walls should be up at Rittenhouse and Ellsworth Roads in front of the new Costco by this summer. Peterson projects that Queen Creek can expect to enjoy the rotating flavors of Batch Cookie Shop by the fall, and explained in his email that one hope for their expansion includes partnering with several local nonprofits. “We are especially interested in helping local children and families,” he said.
