Gilbert Location of Koibito Poké is Opening Early Next Year

The build-your-own poké bowls eatery is set to open on 875 S Gilbert Road at the beginning of 2024.

Koibito Poké is coming to 875 S Gilbert Road, Suite 100 in Gilbert, according to a press release from Mack Media Relations.

Owned by franchisee Daryl Edson, the healthy fast casual concept is known for its build-your-own poké bowls that take influence from traditional Hawaiian and Japanese flavors.

Focused on fresh ingredients, menu offerings include poké, chicken, tofu, and vegetables. Customers can also choose from a base of cauliflower, white, or brown rice, as well as a spring mix. There are various sauces and garnishes to go on top, and toppings such as shaved brussel sprouts, edamame, cucumber salad, seaweed, and crab mix.

The chain is co-founded by former MLB Pitcher, three-time World Champion, and bestselling author Todd Stottlemyre. It was also named one of the top new and emerging franchise brands in 2023 by Entrepreneur.

Edson did not immediately reply to What Now Phoenix for comment.
